During this innovative procedure, wine is gently pumped through a semi-permeable membrane at a minimal pressure. This separates the wine into two distinct streams: the permeate, comprising small molecules such as water and ethanol, and the retentate, which retains the higher molecular weight components like tannins, pigments, and aromatic compounds. As a result, the essence of the wine, including its flavor profile and aroma, remains intact.
